Lipase belongs to the carboxyl ester hydrolase class and can gradually hydrolyze triglycerides into glycerol and fatty acids. Lipase exists in fat-containing animal, plant and microbial (such as mold, bacteria, etc.) tissues. It includes phosphatase, sterolase and carboxylesterase. Fatty acids are widely used in food, medicine, leather, daily chemical industry and so on.
Lipases from microbial sources can be used to enhance the flavor of cheese products. Limited hydrolysis of milk fat can be used in the production of chocolate milk. Lipases can give foods a special milk flavor.
Lipases can prevent baked goods from going bad by releasing mono- and di-glycerides. Defatting bones in the production of gelatin needs to be done under mild conditions, and lipase-catalyzed hydrolysis can accelerate the defatting process.
